Simple and ready before you know it. This yam preparation is one of the fastest preparations you can do with the root vegetable.
SURANACHA KIS
Ingredients
300 grams yam (suran), peeled, and grated
4 tbsps ghee
1 tsp cumin seeds
8-10 curry leaves
1 tsp ginger-green chilli paste
1 tsp sugar
Rock salt (sendha namak) to taste
2-3 coarsely crushed roasted peanuts
2-3 tbsps chopped fresh coriander leaves
Scraped fresh coconut for garnish
Yogurt to serve
Method
1. Heat ghee in a pan. Add cumin seeds and let them change colour. Add curry leaves and ginger-green chilli paste and mix well. Cook for 1-2 minutes.
2. Add the yam and sauté for 2-3 minutes. Sprinkle 2-3 tbsps water, and mix, cover and cook for 6-8 minutes.
3. Add sugar, rock salt, crushed peanuts, and coriander leaves and mix well.
4. Switch the heat off, transfer into a serving bowl, garnish with coconut and serve with yogurt.
