SEE UPDATED RECIPE BELOW FOR MARINADE
Enough for 3-4 mini chicken fillets
OR 1 chicken breast - tenderised or flattened slightly with frying pan - see Chicken Milanese.
1 tsp (pre-bought) Lebanese 7 spice
1 tsp smoked paprika
1 tsp honey
1 small garlic clove - crushed
½ tsp salt
2 tsp lemon juice / squeeze
1 tsp olive oil
Mix well and leave to marinade for 8 hours
If you don't have Lebanese 7 spice - here's my version: Seez's Seven Spice (which is actually 8)
5 Cardamom pods - black seeds only
1 tsp All Spice
1 tsp Coriander seeds
½ tsp black peppercorns
1/4 tsp cumin seeds
1 tsp sumac
1/4 tsp group cinnamon
1/4 nutmeg - finely grated
grind together in pestle and mortar - keep in air tight jar.
Tahini dressing
1 level tablespoon yogurt
1 level tablespoon tahini dressing
1 small garlic clove
squeeze lemon juice
salt
cold water to loosen if too dressing is too thick
This chicken is lovely in a flatbread with salad.
