Regarded as the world’s first “fusion cuisine”, Macanese cuisine is shrouded in well-kept secret family recipes and traditionally cooked at home, it is also among the hardest to find in Macao! But that has changed since Macao was designated by UNESCO as a Creative City of Gastronomy in 2017.
To celebrate the sustaining power of Macanese cuisine, we speak to Maria Helena Senna de Fernandes from the Macao Government Tourism Office and Macao Institute for Tourism Studies' Chef Hans Lee Rasmussen who is training the next generation of chefs to celebrate Macao’s unique cuisine in creative ways, working with local ingredients and reducing food waste.
