Homemade Pork Tocino
Pork tocino is a sweet cured pork that is traditionally served for breakfast/brunch in the Philippines. Tocino is usually served along with garlic fried rice and egg. The pork is marinated in salt, brown sugar and other spices. Then cured overnight or for 3 days before cooking to achieve that tender and savory pork tocino.

Homemade Pork Tocino Recipe
Ingredients
½ kilo pork tenderloin, sliced into thin strips
2 tbsp vinegar
1 tbsp soy sauce
1/3 cup pineapple juice
¾ cup brown sugar
1 tbsp garlic, minced
1 tbsp salt
1 /2 tsp ground black pepper
½ tsp red food color (optional)
Water
Cooking oil
Procedure
1. Combine all the ingredients in a bowl. Put-in pork and press and toss into the mixture making sure that it’s well distributed. Cover and refrigerate overnight or for 3 days for best result.
2. To cook tocino boil pork in water just enough to cover the meat. Then lower the heat. Turn meat to cook the other side. When most of the water is gone add cooking oil. If your pork has enough fats you don’t need to add cooking oil.
3. Let it cook over medium heat until it caramelize and meat turns brown. Served along with garlic fried rice, sunny side up and pickled papay(atsara) or sliced fresh tomatoes.
