Here is Today's full Recipe :
BBQ Leather Jacket with zucchini Fettuccini, olives chilli garlic tomato.
Ingredients:
2x Whole Leather jacket skinned
2x large zucchini peeled into fettuccini.
30g Sandhurst green olives (Sandhurst)
30g Kalamata olives (Sandhurst)
20g semi dried tomato (Sandhurst)
1x eshallot
2 large vine ripened tomatoes
½ Yellow capsicum
1x Fresh chilli
2 x Garlic clove
15 ml White balsamic (Sandhurst)
20 ml Olive oil
Krio Krush Sea salt
Kiro Krush Lime pepper seasoning
Sea salt
Method:
Prepare fish
1. Score the leather jackets with a sharp knife.
2. Rub fish with olive oil and season limberly with lime pepper seasoning.
3. Leave to the side.
Prepare Zucchini Fettuccini
1. Peel Zucchini with julienne vegetable peeler
2. Finely slice garlic, chilli, and capsicum semi died tomato.
Pre heat BBQ and turn to a medium heat.
1. Place a frying pan on the BBQ and preheat.
2. Place leather jackets onto the hot plate and sear till nicely golden brown.
3. Turn the fish over and turn the hot plate off.
4. Add olive oil to frying pan add garlic, chilli, semidried tomato capsicum to the hot pan.
5. Add Zucchini to the pan and olives Toss together to warm through.
6. Add torn basil.
7. Add dash of vinegar.
8. Top with leather jacket and serve with a lemon cheek.
