Prep time approx. 30 mins
2 cups bulgur wheat
1.5 LBS ground turkey (please use any ground meat of your choice)
1/2 teaspoon salt
1/4 teaspoon of cummin, Italian season, paprika, turmeric, ginger, cloves, cinnamon, and black pepper (any other spice of your choice)
just a small portion of fresh thyme, green onions and cilantro
1 medium onion.
Oil for frying and cooking the meat
Instructions for bulgur dough:
Break down the bulgur wheat into small portions using a food processor (if not available, soak the bulgur for about an hour and break it down) add the spices at this point. (I did not break mine into flour, I was not looking for a smooth finish).
- add 1/2 portion of the meat until well combined, add 1/2 teaspoon of water
- wrap in cling film and leave in the refrigerator for 4 hours or overnight.
Instructions for meat filling:
- in a hot pan, fry some diced onions for 5 mins
- add spices of your choice
- add fresh spices
- add meat, and let it cook for about 10 mins on low-fire
Combine bulgur dough and meat filling:
- take the bulgur dough out and let it sit for 30 mins
- then form an oval shape, put the filling inside, and seal with your hands forming the oval shape
- deep fry for 5 mins
use the air fryer at 400 or 350 F for 8 mins
- serve
