Baby Spinach Goma -Ae - Japanese Spinach Salad with Sesame dressing
Ingredients:
10 ounces Baby Spinach
1 teaspoon salt for blanching
Dressing:
3 tablespoons white sesame seeds
1 tablespoon soy sauce
1 teaspoon sugar
1 teaspoon mirin
Salt to taste
Method:
Boil water in a pot and add 1 teaspoon salt. Add spinach and blanche for about 45 seconds . Remove and drain and transfer to an ice bath ( bowl of cold water with ice cubes)
Prepare the dressing by toasting sesame seeds in a skillet on low- medium heat. Keep stirring to prevent the seeds from burning. Once the seeds start popping and browning transfer to a mortar pestle. Grind the toasted sesame seeds leaving some whole for texture. Add sugar, soy sauce, mirin and mix well. Add a pinch of salt if required.
Squeeze spinach and transfer to a salad bowl. Add sesame mixture . Toss well to coat . Enjoy!
