Stilton Shakshuka 😋

✨Here is what you need✨
Ingredients:
1/2 onion ( chopped)
1/2 bell pepper (chopped)
2 garlic cloves ( minced)
2tbsp olive oil
1tbsp paprika
1tsp cumin
Black pepper to taste
Salt to taste
4 tomatoes (halved, sliced )
70ml water
4 eggs
100g 1912 Artisan stilton
Garnish:
30g 1912 Artisan Stilton
Bunch of coriander (chopped)
Method:
In a large frying pan, heat oil and add chopped onion. Cook for 2-3 minutes or until softened.
Add chopped bell pepper and cook for another few minutes.
Add minced garlic and mix well.
Add paprika, cumin, pepper and salt. Cook for 2-3 minutes stirring occasionally.
Add sliced tomatoes followed by water, mix well Cover with lid and cook another 10 minutes or until tomatoes yield a nice, rich sauce.
Using a spoon, make 4 small wells in sauce and crack one egg onto each well.
Crumble 1912 Artisan Stilton on top, cover with lid and cook another 5-7 minutes or to your liking.
To finish, garnish with a small handful of crumbled 1912 Artisan Stilton and chopped coriander.
