A summer special gazpacho prepared with fresh watermelons. Cold and refreshing!
WATERMELON GAZPACHO
Ingredients
½ medium watermelon
2 medium cucumbers, peeled
1 medium red capsicum
1 medium yellow capsicum
8-10 fresh coriander stems
Salt to taste
½ tsp black pepper powder
2 tbsps olive oil
1 tbsp lemon juice
2 bread slices
Ice cubes as required
Chopped English cucumber for garnish
Fresh mint sprigs for garnish
Method
1. Roughly chop the watermelon, slice the cucumbers, and roughly chop the red capsicum and yellow capsicum.
2. Put the watermelon in a blender jar, add the cucumber, red capsicum and yellow capsicum, coriander stems, salt, black pepper powder, olive oil, lemon juice, bread slices and ice cubes and blend to a coarse paste.
3. Transfer into a serving bowl, garnish with English cucumber pieces and fresh mint sprig. Serve immediately.
