Here’s the recipe -
Ingredients :
To boil the pasta :
Macaroni - 400g
Water - For Boiling
Salt - 1 tbsp
Other ingredients :
Oil - 2 tbsp
Garlic (chopped) - 5 cloves
Green Chilli (chopped) - 2 nos
Onion (finely chopped) - 3 nos
Tomato(finely chopped) - 3 nos
Red Chilli Powder - 1 tsp
Turmeric powder - ¼ tsp
Coriander Powder - 2 tsp
Garam Masala - ½ tsp
Butter - 3 tbsp
Maida - ¼ Cup
Milk - 500ml
Water - ¾ Cup
Salt - 1 ½ tsp
Black Pepper Powder - 1 tsp
Processed cheese slices - 3 nos
Cheddar Cheese Slices - 3 nos
Toppings :
Mozzarella Cheese - 1 ½ Cup
Bell Peppers (chopped) - ½ Cup
Coriander Leaves - For Garnish
Instructions:
1. Bring water to boil in a deep pot. Add salt to it.
2. Add the macaroni and boil it for the required amount of time mentioned in the packet.
3. Strain it, run it under cold water and strain it well again.
4. Coat the pasta with oil to avoid letting it stick. Keep it aside.
5. In another pot, add oil, add garlic, green chilli and saute for a few seconds.
6. Add the chopped onions and saute till it turns light brown.
7. Add the tomatoes and saute for a few minutes.
8. Add the masala powders and cook it for a minute.
9. Add butter, let it melt completely. Add the maida, let it combine well to form a roux-like texture.
10. Add milk and mix it well till there are no maida lumps.
11. Add a little water and mix well till the sauce thickens.
12. Add the macaroni, mix it well till it is coated evenly with the sauce.
13. Add the cheddar and processed cheese slices, cover the pot on a low flame and let the cheese slices melt.
14. Mix the pasta till the cheese dissolves.
15. Transfer the pasta to an oven proof dish, top it with mozzarella cheese and chopped bell peppers.
16. Bake it in the oven at 200 degrees till the cheese is melted and golden brown.
17. Garnish it with coriander leaves and serve it hot.
If you don't have an oven, add mozzarella cheese directly to the pot and mix it till it dissolves.
