Rawon from 🇮🇩, a beautiful complex beef soup that's earthy, nutty, and slightly tangy. The taste of keluak is quite hard to describe accurately, it seems like cocoa, olives, and mushrooms are the most common descriptors. It's also referred to as the black truffle of Asia haha
Rawon:
6 buah keluak nuts, flesh removed
7 shallots
4 cloves garlic
1/2 inch turmeric
1/2 inch galangal
1 large red chilli
1/2 tsp cumin
1/2 tsp coriander
5 Candlenuts
1/2 cup oil
Blend all the ingredients together till smooth. Then transfer to a pot and fry for about 20 minutes on medium heat. Add in 2 sticks of lemongrass, 6-7 leaves of kaffir lime, 6 cups of water, 1 cup of tamarind water, 2 tbsp of salt, 1 tbsp of sugar, and 1 tsp of black pepper, 750g beef shank, and allow to simmer for about 1.5/2 hours. Serve with rice and enjoy!
