This recipe is easy and quick to make. Pan fry for best results, don’t deep fry. The kids will enjoy and perfect for their lunch box too. It is good appetizer for Ramadhan.
INGREDIENTS:
2 carrots grated
2 zucchini grated
4 sprigs green onions chopped
1/2 cup chopped coriander leaves
1 cup besan/chick pea flour
3 tbsp rice flour
3 tbsp all purpose flour/Maida
1/2 tsp baking powder
2 tbsp oil
1 tsp salt or to taste
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp roasted and crushed cumin powder
1 tsp crushed green chillies
1 tsp ginger/garlic paste
1/2 cup water
In a bowl sift the 3 flours and baking powder and set aside.
Grate carrots and zuchinni separately. In the zuchinni add one tsp salt and set aside for 30 minutes.
After 30 minutes squeeze the water from the zuchinni.
In the flour add ginger/garlic paste and chopped green chillies. Then add all the spices, the oil, green onions, coriander leaves, grated carrots and zuchinni. Mix everything well without adding any water first, then gradually add the half cup water and set aside. As the mixture sits it will release more water.
Turn the heat on medium low, and in a frying pan add 2 tbsp oil, when the oil is hot add one scoop of the batter and flatten to 4 inch circle, cook on one side for 4 minutes or until golden brown, then flip and cook further 3 minutes or until golden brown. Remove from heat and enjoy with Yoghurt mint Chutney the way we did.
