Dhuwan Dahi Gosht is a smoked mutton/beef or chicken curry in which the meat is cooked in spices ginger garlic topped with yogurt and then infused with the smoke released from a burning piece of charcoal. The charcoal is drizzled with oil or melted butter or same curry oil which releases a very fragrant smoke which is trapped in the curry giving it a lovely earthy flavours. Coal smoke has its own aroma when its given into meaty dishes. The subtle flavor of this smoke gives the gravy a very distinct flavor which is very pleasing to the palate. This smoked yogurt meat will tentalize your taste buds, prepare on Eid day or for weekend dinner. Goes great with garlic naan,plain naan and rice.
Ingredients:
Beef boneless 500 gms
Yogurt 1 cup( add salt, roasted ground cumin, chaat masala)
Green chilly paste 2 small
Ginger garlic paste 3 tablespoons
Roasted/ground coriander 1 1/2 tablespoon
Roasted/ground cumin 1 1/2 teaspoon
Red chilly powder 1 teaspoon/ to taste
Red chilly flakes 1 teaspoon
Salt to taste
Coal for smoke
Ghee or oil
Garnish:
Mint
Fresh coriander
Onion rings
Green chillies
Method:
Heat a pan add oil/ghee. Add ginger garlic paste sautay until little brown Add beef now cook until it changes its color add the spices. Cook well with it make sure the spices doesn’t burn.
Now add water and let it cook until the meat softens.
After 35-40 minutes and when the meat is cooked completely add green chilly paste and salt.
Mix well.
Give smoke to the meat.
Serving:
Take a nice serving dish, add meat to the bottom, drizzle yogurt put onion rings, mint ,coriander and green chillies.
