Ermine Frosting | Not Sweet Buttercream | Flour Buttercream
Today I am sharing our Not-Sweet Buttercream (aka. Flour/Ermine Buttercream) This delicious flour buttercream is silky smooth, light and fluffy, making it the perfect buttercream to pair with a sweet cake.
Quite often Buttercream can be so overpowering with that "sharp" sweetness from all that icing sugar. It is still possible to get the fuffy silky texture without all that sugar. This buttercream compliments a sweet cake exceptionally well creating a well-balanced cake.
To make this delicious buttercream, you need just 4 ingredients: butter, flour, sugar, milk!

LETS MAKE IT! 😍
INGREDIENTS: (you can half this recipe if you do not need as much buttercream)
Half cup - all-purpose flour
2 cups - granulated sugar
2 cups whole milk
500gms butter, softened at room temperature
INSTRUCTIONS
1. Combine flour, sugar, milk in a saucepan. Whisk until combined.
2. Place saucepan over low heat and allow the mixture to come to a boil, mixing continuously. Once the mixture starts to bubble, remove from heat and scrape the pudding onto a clean dish and immediately cover it with plastic wrap, pressing the plastic wrap directly onto the pudding to keep a skin from forming. Allow to cool to room temperature.
4. Once the pudding has cooled, beat the butter in a medium-sized bowl until smooth and fluffy and lightened in colour, 5-9 minutes.
5. Add the cool pudding one tablespoon at a time, mixing well after each addition. Once all the pudding has been added, mix for another few minutes, until the buttercream looks fluffy and silky.
