RICE BOWL WEEK - DAY 2 [RECIPE]
Hainanese Chicken Rice.. In a rice cooker! An even simpler method to prepare this recipe. Chicken drumsticks are a cheaper cut and have enough fat that renders down when steamed in the rice cooker. CHEAP and delicious meal!
Serves 2:
CHICKEN BROTH
-can use store bought broth, or homemade:
-Chicken carcass/bones
-1 shallot
-1.5” ginger
-1 bunch green onion bottoms (white parts)
-salt
Add ingredients to a pot and bring to a boil
GINGER RICE
-2 tbsp neutral oil (I prefer avocado oil. Typically chicken fat is used, use that for more flavour, otherwise neutral oil is good)
-2 clove garlic (minced)
-1” ginger (minced)
-1 shallot (minced)
-2 cup long grain rice
-2 cup Chicken Broth
-4 chicken drum sticks
-measure and wash rice
-Saute ginger, shallot, garlic on low-medium heat in neutral oil for 5 minutes. Just want to sweat the aromatics, not fry them
-add aromatics and oil to rice pot, mix well and coat evenly around all rice grains
-add stock
-start rice cooker.
GINGER SCALLION OIL:
-1.5 bunch green onions (sliced thin)
-3-4” ginger (minced)
-2 cloves garlic (minced)
-1-2 tsp salt (to taste)
-1 tsp sugar
-neutral oil (avocado oil preferred)
Once rice is finished, remove drumsticks from the rice cooker set aside.
-add rice to plate
-add sliced cucumber
-cilantro (optional)
-top with chilli oil
