Undhiyu is a mixed vegetable winter speciality and it's so yummy that once you taste it, you just can't stop eating it. It is a very healthy dish as so many vegetables are used to make this yummy dish. The more time it sits, it becomes tastier and tastier. Well, if you have not tasted this dish then you are definitely missing out on a very popular dish of Gujarat. Yes, a lot of preparation goes into making this dish but let me tell you its worth the effort. At least make it once and see how your family and friends (provided you share it with them) will enjoy it and praise you to the skies. So let me show you how to make Undhiyu at home with the ingredients given below:

Ingredients:
(In the order of instructions)
For making Methi Muthia:
1/2 cup Wheat flour
1/2 cup Besan
1/2 cup Rava/Semolina
1/2 tsp Jeera/Cumin powder
1/2 tsp Dhania/Coriander powder
1/2 tsp Turmeric/Haldi powder
1/2 tsp Red Chilli powder
Salt to taste
1 tsp Sugar
1 tbsp Oil
Juice of 1 Lemon
2 chopped Green Chillies
2 cups chopped Methi leaves

Root vegetables:
2 Potatoes
1 cup Suran/Yam
1 cup Shakarakand/Sweet Potato
1 cup Kand/Purple Yam
Oil for deep frying

Green Masala:
1 inch Ginger
10 Green Chillies
1/2 cup Garlic
1 cup grated Coconut
1 cup Green Garlic
2 cups Coriander leaves
Salt to taste
1 tbsp Sugar
Juice of 2 Lemons

Stuffing for Brinjals:
4 tsp Peanut powder
Salt to taste
1/2 tsp Sugar
1/2 tsp Red Chilli powder
1/2 tsp Jeera powder
2 tbsp Green masala
6 small Brinjals

Other ingredients:
1 cup Oil
1 tbsp Ajwain
2 tbsp White Til/Sesame
1 cup Green Peas/Matar
1 cup Tuvar Dana/fresh Pigeon Peas
1 cup Surti Papdi/Indian Broad Beans
1/2 cup Valor dana/Field Beans
1/2 tsp Hing
Salt to taste
2 tsp Kashmiri Chilli powder
1 tsp Jeera/Cumin powder
1/2 tsp Turmeric/Haldi powder
1 tbsp Dhania/Coriander powder
1 cup Water
Coriander leaves for garnish
