Ingredients:
Fish Cake
-2 cod filets
-1 large potato
-1 tbsp butter
-2 tsp salt
-2 tsp black pepper
-2 tsp garlic powder
-2 tsp onion powder
-2 tsp chili powder
-2 tsp paprika
-2 tsp dried herbs
-1 large egg
-30g panko bread crumbs
-MSG
Onion Rings
-1-2 chicken breast
-1 large onion
-1 tsp black pepper
-1 tsp garlic powder
-1tsp onion powder
-2 tbsp cream cheese
-1 tbsp shredded cheddar cheese
Sauce
-2 tbsp ketchup
-1 tsp vinegar
-1 tbsp worcestershire sauce
-1 tsp brown sugar
-1 tsp black pepper
For Deep Frying
-all purpose flour
-2 large eggs
-normal bread crumbs
-oil
Garnish
-chopped parsley
-parsley sprig
Instructions:
Salt the cod filets and the chicken breast, bake at 200°C/400°F for 8 minutes. Peel and chop potatoes, place into a bowl of water. Boil potatoes until they are fork tender. Add butter and mash with the potatoes then set aside. Cut onion into thick rings.
Shred the meat after it's cooked and place into two separate bowls. For the chicken add seasonings, cream cheese and shredded cheese, then mix together. Shape the chicken mixture around the onion rings.
For the fish add mashed potatoes, seasonings, eggs and bread crumbs, then mix together. Shape into round balls with your hands. Place on parchment paper and freeze for 2h.
Coat fish cake in flour, egg and bread crumbs.
Deep fry at 170°C/340°F for 4-5 minutes or until golden brown. Coat onion chicken rings in flour, egg and bread crumbs. Deep fry at 170°C/340°F for 2-3 or until golden brown.
For Sauce combine all ingredients into a saucepan and whisk on medium heat until fully combined. Plate the fish cake, onion rings and sauce together. Garnish with some parsley.
