SHEET PAN FAJITA RECIPE WITH COCONUT-LIME DRESSING:
Preheat oven to 400F and line baking sheet.
SPICE BLEND: Combine in small bowl
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
FOR THE FAJITAS: Cut ingredients in 1/2 inch thick slices, combine with oil and cover in spice blend. Toss and coat. Pour onto baking sheet, and bake for 20 minutes or until meat is cooked and veggies are soft.
1 pound boneless skinless turkey breast
2 large bell peppers
1 medium yellow onion
2 tablespoons avocado oil
FOR THE COCONUT-LIME DRESSING: Combine and drizzle over fajita.
1/2 cup full-fat coconut milk
Juice of 1 lime
1 teaspoon ACV
1/4 teaspoon garlic powder
SERVE IN TORTILLA OR LETTUCE WRAP
GARNISH WITH CILANTRO
BERRY PROTEIN MUFFINS
3 large eggs
1/3 cup honey
1/3 cup coconut oil or ghee, melted
1 teaspoon pure vanilla
1 1/2 cups almond flour
1/2 cup tapioca flour
1/2 cup collagen powder or protein powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup fresh blueberries or berries of choice
Preheat oven to 350F and in baking sheet
Combine eggs, honey, oil and vanilla until combined.
Add flours, collagen, baking soda and salt to wet ingredients and mix until thoroughly combined.
Gently stir in blueberries and divide evenly among muffin cups.
Bake for 20 minutes. Allow muffins to cool for 10 minutes.
