Ingredients:
For the chicken:
500 gr chicken thigh skin on
1 tbsp corn starch
Pinch of salt
Pinch of white peppercorn
Oil to brush the pan
For the sauce
8 or 60 gr shallots
5 or 30 gr garlic
4 lemongrass
2 cm or 8 gr galangal
5 Bali hot peppers (cabe Bali)
6 small green chillis
1 big red chilli
2 tbsp vegetable oil
2 1/2 tbsp sugar
2 tbsp fish sauce
1/2 tbsp oyster sauce
1/2 tsp salt
Pinch of white peppercorn
Small bunch coriander leaves
Served with:
Steamed jasmine rice and cucumber
