RECIPE: 1 stick unsalted butter, softened; 1/3 c. sugar; 1 tsp vanilla bean paste; Â_ tsp ground cinnamon; pinch of salt; 1 c. all purpose flour; 1 large egg white; Â_ c. chopped hazelnuts; Hershey kisses or jam; Â_ c. confectioner’s sugar. Beat butter & sugar in stand mixer w/ paddle. Add vanilla, cinnamon, salt & flour; beat till smooth dough forms. Roll into log. Put Â_-inch slices on sheet tray; make well in centers w/ thumb. Brush edges w/ egg white & roll in nuts. Bake at 350F till golden, 15-18 min. Top w/ kisses or jam while warm. Dust w/ confectioners' sugar before serving.
Hi, I'm Katie Roseness and today I'm going to show you how to make jam thumbprint cookies.
I'm using the same shortbread dough I used for my cranberry shortbread, I just omitted the cranberries and the pistachios. And I have this beautiful dough here that I rolled into a log. And just to make this easy, I'm going to cut this into wedges with a nice, sharp knife. Let's try for about 8 of these. And I have my cookie sheet ready to go.
But we're going to get a little fancy with these shortbread cookies and make my thumbprints right in the center. So as these bake in the oven, the thumbprint will tend to kind of rise up and overtake itself and then once they're done baking, just go back in. I like to use the back of a rolling pin or even your thumb again if you're not worried about burns, and just kind of reestablish that thumbprint right in the bottom of the cookie.
I'm just going to finish the rest of them. A thumbprint right in the center. And then this is totally optional but taking a little bit of egg white and just brushing the rim of my cookie and I'm going to dip each one in some ground hazel nuts. Now you can totally skip this step if you're not a fan of hazel nuts. I just think it gives them a really pretty look.
We're ready to bake. So I'm going to bake these cookies at 350 degrees just until they're nice and golden brown, and then we're going to fill them half with jam and half with kisses.
So I can smell my thumbprint cookies are ready to come out of the oven so I'm just going to give them a check. And they are. They're nice and golden brown right around the edges.
And you can see, they kind of puff up a little bit and again, you can go back in and just kind of reestablish that thumbprint in the center if you find it's not enough for you.
But just to fill these. Some of them, I have these really cute little holiday kisses. These are great kind of peppermint flavored. It's a great filling option. Or else I also have strawberry jam. But really, you could fill these with whatever you like. If you do top them off with something like this chocolate, I recommend sticking them back in the oven just for about a minute just to let the chocolate melt and adhere to the cookie.
My jam, I'm just going to spoon right in the center. I like to be generous. I love jam. If you like less jam, feel free to put less.
Okay, we're ready to serve. I have my platter here. I'm just going to take my cookies onto my tray and just top them off with a little bit of powdered sugar and they're ready to go.
