Salads don't need to be boring, try out this recipe for salad with beetroot and apple!

Ingredients for 2 portions:
6 slices of white baguette
7 tbsp olive oil
120 g goat's cheese, (roll)
1 sprig of rosemary
2 tbsp lemon juice (or 3 tbsp)
1 tsp coarse mustard
5 tsp runny honey
Salt and pepper
300 g beetroot, cooked and vacuum-packed, from the chilled aisle
1 tart apple
1 bunch rocket (approx. 40 g)
Preheat the oven to 220 degrees (fan oven not recommended). Lay the slices of bread on a baking sheet and drizzle over 2 tbsp oil. Slice the goat's cheese into 12 slices. Strip rosemary leaves from their stems and chop finely. Arrange 2 slices of goat's cheese on the slices of bread and sprinkle rosemary over them. Drizzle ½ tsp honey over each slice of bread topped with cheese.
Mix lemon juice with 2 tbsp water, mustard, 1-2 tsp honey, salt and pepper. Gradually add 5 tbsp oil, stirring constantly. Halve the beetroot and slice. Core apple, slice and dice. Clean and wash rocket and spin dry.
Bake goat's cheese slices on the middle shelf of a hot oven for 7 to 10 minutes. Mix beetroot, apple and rocket with the honey and mustard dressing. Serve with the baked goat's cheese toasties.
