1 10 inch pie shell
3 Eggs
1/2 cup apple butter
1 cup milk
1 cup light cream
pinch of salt
1/2 tsp. grated orange rind
1/4 tsp. freshly grated nutmeg
DIRECTIONS:
Chill pie shell. Beat eggs in large mixing bowl, add all ingredients except nutmeg and beat until well blended. Let filling rest for ten minutes, or until all bubbles have subsided. Pour filling into the pie shell. Sprinkle the nutmeg over the top. Bake on lower rack in oven at 450 for ten minutes. Reduce heat to 350 and bake another 30-35 minutes, or until a knife inserted in the middle comes out clean. Serves six generously. Delicious with whipped cream on top.
