Issue with one of the two adapters bought about 6 months ago.

One of them stopped working during gameplay.

Update and Resolution

So 8BitDo Support was able to diagnose my problem and provide a solution. I was able to connect my XBox controller to the Switch again. See their response below:

The second USB adapter doesn't seem to blink normally in the video as you can see the first(Left) USB adapter blinks 4 times per cycle, and the second(right) USB adapter blinks 2 times per cycle, so let us explain: The USB adapter blinks 4 times per cycle, it means it's in the Switch working mode and if it blinks 2 times per cycle then it's in the Windows X-input working mode and that's why you couldn't make it to work with your controllers ;)

Therefore, here is what you can do with the second USB adapter, when the adapter is plugged in, keep pressing the pair button of the USB adapter for 5s till the LED lights off, wait for it to blink again, then try it with your Xbox controllers.
