In this short video, Cast Iron Katie demonstrates how to candy lemons for cake decoration or a treat.
Ingredients:
3 c water
2 lemons, sliced thinly
1 c sugar
Blanch lemons.
Boil 2 c water.
Turn off heat.
Add lemons to just boiled water for 1 minute.
Remove lemons and place in ice water for 1 minute.
Discard water.
Dissolve sugar in 1 c water.
Bring to a boil.
Add blanched lemons.
Reduce heat.
Simmer lemon slices until translucent, like stained glass.
Remove lemon slices from syrup.
Allow to dry for a day. They will still be sticky.
Reserve syrup for cakes or cocktails.
