Here’s a simple and delicious recipe for Gajar ka Halwa:
Ingredients:
Carrots (grated): half kg
Ghee (clarified butter):
3-4 tbsp
Sugar: 150-200 g (adjust to taste)
Green cardamom powder: 1/2 tsp
Almonds: 10-12 (sliced)
Khoya (optional, for richness): 100 g

Instructions:
1. Prepare the Carrots:
Wash, peel, and grate the carrots. Use a food processor to save time if needed.
2. Cook the Carrots:
In a thick-bottomed pan, and Add the grated carrots with ghee and stir well.
Cook on medium heat, stirring occasionally, approx 2 -3 mins.
3. Add Sugar
Stir continuously until the sugar dissolves and the mixture thickens further.
Add Fresh cream and cook for another ,5 minutes, ensuring the halwa doesn’t stick to the bottom.
4. Flavoring:
Add cardamom powder and mix. This gives the halwa its signature aroma.
5. Enhance with Nuts and Khoya:
If using khoya, crumble it into the halwa at this stage, mix, and cook for another 5 minutes.
6. Serve:
Remove from heat and let it cool slightly. Serve warm, garnished with additional nuts.
