Lotus Biscoff Brownies

Ingredients :
1) Lurpak Unsalted Butter (melted) - 150gm
2) Light Brown Sugar - 150gm
3) Caster Sugar - 150gm
4) Eggs (Large) - 3 nos.
5) Vanilla Essence - 1 tsp
6) Pastry Mart High fat Cocoa Powder 20-22% (Sifted) - 60gm
7) Self Raising Flour (Sifted) - 90gm
8) Lotus Biscoff Biscuit (Roughly broken) - 200gm
9) Lotus Biscoff Spread - 200gm
10) White Chocolate Compound - 50gm
Method :
1. Whisk melted butter and the 2 sugars together.
2. Add in the eggs, one at a time, till well mixed.
3. Add vanilla.
4. Add the Sifted Self raising flour and Pastry Mart High fat Cocoa Powder 20-22%. Mix together.
5. Lastly, fold in the broken Lotus Biscoff biscuits,
6. Pour the brownie batter into an 8 inch tray and bake at 170C for around 25 - 30 minutes.
7. To make the topping, melt the Lotus Biscoff spread and the white chocolate separately.
8. Pour the Lotus Biscoff over the brownies, spread evenly.
9. Drizzle the melted white chocolate compound over the brownies.
10. Chill in fridge for 20mins for chocolates to set.
