Each bite of this exquisite tart pairs a crisp pistachio tart shell with an impossibly light goat cheese and honey mousse. A sprinkle of crushed pistachios and ruby pomegranate arils add even more flavor and give the tart a holiday vibe. Luckily, this honey, goat cheese, and pistachio tart is pretty dang easy to make.
It's important to build up the sides of the tart shell and press the pistachio dough into the corners of the pan. As the shell bakes, it will slide down just a bit. If your corners are thick to begin with, they will end up even thicker.
The goat cheese mousse is very light in texture and flavor. It's very similar to a no bake cheesecake. If you'd like a more intense tangy goat vibe, try using equal amounts of cream cheese and goat cheese. To prevent lumps, it should help if you add the syrup in slowly and mix well after each addition.
