A really easy recipe showing you how to make roasted vegetable lasagne in the UK. There's nothing better than a homemade lasagna recipe.
Recipe
2 x Courgettes
2 x Red Peppers
1 x Onion
1 x 200g Can Mushrooms
1 x 400g Can Tomatoes
3 Tablespoons Tomato Puree
Salt & Pepper
250g Cream Cheese
100g Parmesan Cheese
2 oz Cheddar
70ml Single Cream
Pasta Sheets
1 Tablespoon Oil
If pasta sheets need cooking, cook according to packet instructions.
Chop the courgettes, onion and red peppers. Add to a mixing bowl and toss in 1 tbsp of oil and salt and pepper then spread onto a baking tray and cook for 10 - 15 minutes at 180c/350f/Gas 6.
Mix chopped tomatoes and tomato puree then add the cooked veg and mushrooms. Stir.
Add cream cheese to a bowl. Gradually whisk in the cream. Stir in the parmesan.
Add one layer of tomato and veg to bottom of baking dish, top with the pasta and then the cheese sauce. Repeat and then finish with a layer of tomato and veg and sprinkle over the cheddar.
Cook for 50 mins on 180c/350f/Gas 6
