Hey Guys, Today I'm going to show you how i make my Khadeko Gobi Ko Achar as known as Cauiliflower Pickle. Homemade Pickle is very popular in my country Nepal and we like to eat pickles with rice, dal and curry. This cauliflower pickle is super easy to make and it's really delicious so pls give it a try :)

Ingredients:
4-5 Cloves - Garlic (Thinly chopped)
7-8 Pcs - Green Chillies (Chopped)
1/2 tsp - Fenugreek Seeds,
1/2 Cup of Cooking oil,
3 - 4 Tablespoons - Lemon Juice,
Salt to taste,
1 1/2 Teaspoons - Jeera powder,
3-4 Tablespoons - Red chilli flakes,
1 1/2 Teaspoons - Turmeric Powder,
3 Tablespoons- Toasted Mustard Seeds (Finely grinded),
550 g - Cauliflower (Chopped into small pieces),
1 Medium Sized - Carrot (Chopped into small pieces).
Tips: Your pickle will take around 4 - 10 days to ferment depending on where you live and how warm the room is so please don't open the pickle jar for 4-5 days because it will slow the fermentation process. After 4-5 days check your pickle and If it's not fully fermented then let it ferment for few more days and check again :)
