Karanji Recipe || Diwali Special || Fresh Coconut & Jaggery Karanji by Kalpana's Kitchen ||
Diwali special recipe Karanji (Gujiya) recipe. Learn how to make coconut & Jaggery karanji with me Kalpana. Easy n tasty karanji recipe.
Ingredients :-
For Outer Layer
Maida - 2 cups
Ghee - 4 Tbsp
Salt a pinch
Water for kneading Dough
For Stuffing :-
Fresh Coconut - 2 Cups
Jaggery (Gud) - 1 Cup
Cardamom (Elaichi) - 1 tsp
Nutmeg (Jaayaphal) - 1/2 tsp
Ghee - 3 tbsp
Dry Fruits - As per your choice
Almond (Badam) -
Raisins (Kishamish)
Walnut (Akharot)
Cashew (Kaju)
Oil for frying Karanjis
Method:-
For outer layer :- Take maida in a big bowl and mix ghee, salt together
Mix well all ingredients
Add water as required for kneading a dough n knead a smooth and soft dough
Apply 1 tsp oil to dough and
Cover the dough with wet cloth & rest it for 20 mins.
For Stuffing :
In a pan take 3 tbsp of ghee
add jaggery (gud) to the hot ghee & keep stirring of low flame
after jaggery melts add fresh coconut mix it well cook for 5 to 7 mins
add cardamom and nutmeg mix
add all the dry fruits
off the flame and mix it well , keep it aside to cool
take a dough make a small ball and roll a small size thick poori , place 1 spoon stuffing in middle of poori n apply water around the poori n fold it as shown in the video. make all the karanji , you can make appro. 20 nos of karanjis
Take a kadai with oil for frying the karanji, fry all the karanjis on medium flame till golden brown.
