✔︎ You will need:
• bowl
• carving board
• slicer
✅ Ingredients:
• fresh zucchini (squash or courgette) – 1,5 lb | 700 g
• rice vinegar – 3 tbsp
• ginger – 1 tsp
• garlic – 1 clove
• soy sauce – 2 tbsp
• sesame oil – 2 tsp
• ground red hot pepper – ¼ tsp
• sugar – 1 tbsp
• salt – ½ tsp
📙 Preparation:
1. Cut the zucchini (squash or courgette) very thinly with a slicer, salt, toss neatly and leave for 15 minutes.
2. In a bowl combine well the vinegar, sugar, minced ginger and garlic, soy sauce, sesame oil and red pepper.
3. Squeeze lightly the zucchini with a spoon and drain the juice.
4. Add the dressing, toss and leave to marinate for 30 minutes.
5. Serve the Japanese zucchini as an appetizer, salad or side dish.
