A beautiful Greek Pie filled with sweet onions, and herbaceous and morish stinging nettles.
In Greece my mum collected the stinging nettles along the creek beds under the magestic Meteora. In Australia, they self-seed and grow in her veggie patch in Autumn and Spring and then we are the lucky recipients of her beautiful pita creations!
Over the 70 years she has been collecting stinging nettles, her hands have been tolerised to their sting, and she either uses her bare hands to collect them, or the very thin gloves shown in the video. May I suggest you use heavy duty gardening gloves to collect yours!!!!
Once the nettles are massaged and gently macerated with salt, they lose their sting.

0:00 Personal backstory on Greek Stinging Nettle Pies
0:16 Pull out the Nettles and roots and then cut and discards the roots
0:26 Collect a large bowl of stinging nettles and chop off the stalks at the base of the cuttings
0:39 Coarsely chop leaves and fine stalks
0:49 Continue until all the nettles have been prepared this way
0:59 Wash the chopped nettles well and drain them
1:09 Massage 1 to 2 tsp of table salt into nettles for 1 - 2 minutes and let the nettles reduce
1:20 Dice 6 small to medium brown onions
1:30 Massage diced onions with 1 to 2 tsp of table salt
1:40 Add 3 eggs lightly beaten and half to a third of a cup of very fine polenta
1:53 Add 1 cup of EVOO and mix thoroughly
2:10 Generously drizzle a medium to large a pan with EVOO
2:20 Dough and filo making
2:54 Lay first filo sheet so edges overhang the pan
3:03 Drizzle fillo sheet with EVOO and lay second fillo sheet down in the pan
3:14 Drizzle with EVOO and lay third sheet so it overhangs the pan and drizzle again
3:26 Lay fourth sheet in the pan and add 2/3 of the filling evening across the pan
3:47 Lay fifth fillo sheet completely in the pan
3:57 Lay remaining filling evenly across the pan
4:07 Fold in edges of third fillo sheet and drizzle with EVOO
4:19 Lay sixth and seventh filo layers
4:31 Lay eight fillo sheets completely in the pan and then drizzle all the layers
4:41 Fold in edges of the first fillo sheet and drizzle with EVOO
4:51 Sprinkle water on top of the pita and massage into top layer of fillo
5:02 Bake at 180°C (fan) for around one and a half hours until golden brown
5:20 Kali Orexi !!!
