Make this easy microwave mochi with just 3 ingredients. The soft and chewy rice dough wrapped around mango filling for a heavenly tropical treat. It's simply delicious and incredibly easy to make!
(Make 6 mochi)
Ingredients:
2 mangoes, cut into cubes (you can use 1 mango for this recipe)
100g glutinous rice flour-(also known as sweet rice flour)
1 tbsp sugar, optional
Blend together:
100ml milk
80g leftover smaller pieces of mango
Ensure once blends the puree liquid should only be 145ml. Disregards any excess.
Instructions:
1.) In a microwave-safe bowl, combine the glutinous rice flour and granulated sugar. Mix them well together.
2.) Add in 145ml mango puree to the bowl and stir until it turns into smooth mixture. Make sure there are no lumps.
3.) Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape. Microwave the dough on high power for about 3 minutes.
4.) Carefully remove the bowl from the microwave (it will be hot) and give the dough a good stir to distribute the heat evenly.
5.) The dough should become sticky and elastic.
Let the dough to cool slightly until it's comfortable to handle.
6.) Sprinkle a clean surface with some cornstarch or toasted glutinous rice flour to prevent sticking.
7.) Transfer the dough onto the surface and knead it gently for a few minutes until it becomes smooth.
8.) Divide the dough into 6 equal portions and flatten each portion with your hands. Place the mango cubes in the center of each flattened dough portion.
9.) Fold the edges of the dough over the mango filling and pinch them together to seal. Roll each mochi between your palms to create a smooth ball shape.
10.) Repeat the process with the remaining dough and filling.
11.) Serve the mango-filled mochi immediately or store them in an airtight container. They're best enjoyed fresh, but they can be kept in the refrigerator for a day or two.
Note:
1.) Wrap the individual mochi in plastic wrap and put it in an airtight container in the freezer. It will last for two weeks.
2.) Leave it at room temperature for at least 15 to 20 minutes.The mochi should soften once it reaches room temperature. Or you can microwave the mochi.
3.) Set the microwave to 30 seconds to soften the mochi. If it still too hard, then put it back in the microwave for a further 30 seconds.
