I just ‘traveled’ my family to Kelantan (northern state of Malaysia). This dish is new to them. I was first introduced to this dish by a Kelantan friend of mine while studying and working in Kuala Lumpur. Nasi Kerabu Kelantan (Salad/Herb Rice) is a visually appealing Malay rice dish that originated in Kelantan.
It is served with a melange of aromatic herbs and a choice of protein. The blue rice is coloured naturally with bunga telang (blue/butterfly pea flower).
Keropok (fish crackers) provide crunch and salted eggs round off the taste nicely.
This recipe has many parts to it but some of it can be cooked ahead of time. The salted egg, fish crackers, fragrant blue rice, mackerel fishes, and fried chicken are easy to prepare. The rest of the work is mainly cutting up the herbs and vegetables. It is well worth the effort.
Recipe 食谱:
Fragrant Blue Rice 香蓝饭
1 lemongrass stalk 1 根香茅
40-50 pieces blue pea flower 40-50片蓝花
2 cups rice 2杯米
2 pcs kaffir lime leaves 2片疯柑叶
2 slices Galangal ginger 2片南姜
2 slices ginger 2片姜
Fish Flakes Grated Coconut 鱼片磨碎的椰子
4-5 tbsp fresh grated coconut 4-5 汤匙 新鲜磨碎的椰絲
1 mackerel fish 1 条鲭鱼
Grind Ingredients 研磨原料
7-8 shallots 7-8 小洋葱
4-5 clove garlic 4-5瓣大蒜
1 stalk lemongrass 1 根香茅
1 tsp belacan (fermented shrimp paste) 1茶匙(发酵虾酱)
¼ tsp salt ¼茶匙盐
½ tsp sugar ½茶匙糖
3-4 tbsp cooking oil 3-4 汤匙 食用油
4-6 tbsp ground red pepper 4-6 汤匙 磨碎的红辣椒
*add while cooking *边煮边添加
120-150ml coconut milk 120-150毫升椰奶
Herb Mixture (thinly slice) 草本混合物(薄片)
lemongrass 香茅
torch ginger flower 姜花
Vietnamese Coriander (laksa leaves) 越南香菜
Wing beans 翼豆
