Ingredients:
Egg white - 2 pcs (60-70 g)
Sugar - 150
For the syrup:
Apples - 500 g (should get 200 g of applesauce)
Sugar - 180 g
Agar - 8 g (gel strength 900)
Water - 90 ml
Icing sugar for rolling
First, you need to prepare parchment on which we will pipe the marshmallow and 2 large pastry bags with closed star nozzles (you can take other nozzles).
Let's prepare the applesauce. It is better to make it the day before. Cut the apples in half, remove the core, place them on a baking sheet covered with parchment, cut side down. Bake in an oven preheated to 200 degrees for 25-30 minutes.
Next, chop the apples in a blender and rub through a sieve. We need 200 g of puree.
Whip the whites until foamy and gradually add sugar, whip until stable peaks. Leave for now.
At this time, quickly cook the syrup. Put the applesauce, agar, sugar and water in a saucepan. Bring to a boil while stirring constantly, as soon as it boils, reduce the heat and cook for 3 minutes. The syrup should flow in a continuous thread.
Go back to the whites, turn on the mixer and add hot syrup in a thin stream. After adding all the syrup, beat for 3 minutes. The mass will begin to wrap around the whisk.
Quickly transfer the mass into pastry bags and deposit the marshmallow on parchment. Leave at room temperature to stabilize for 2-3 hours (better for 5).
Glue the frozen marshmallows together with their bottoms and roll them in powdered sugar. You can store them for a week in a container with a tight-fitting lid. Apple marshmallow is ready! 🍏
