Ingredients:
For the Biscuit Base:
- 250g digestive biscuits (or graham crackers)
- 120g unsalted butter, melted
- 1 tablespoon sugar (optional, for extra sweetness)
For the Lemon Filling:
- 1 can (397g) sweetened condensed milk
- 300ml heavy cream (cold)
- Zest of 3 lemons (reserve some for garnish)
- Juice of 4 large lemons (about 120ml)
- 1 teaspoon vanilla extract (optional, for depth)
Optional (for a firmer filling):
- 2 teaspoons (5–10g) powdered gelatin
- 2 tablespoons cold water
For Garnish (Optional):
- Extra crushed biscuits
- Lemon zest curls
- Whipped cream
