Ingredients.
175g / 6.1oz Butter 0.58
210g / 7.4oz Brown sugar 0.60
400g / 14.1oz Mixed dried fruit 1.00
100g / 3.5oz Cherries 0.90
Zest and Juice 1 Lemon 0.10
Zest and Juice 1 Orange 0.30
100ml Brandy 2.00
3 Eggs 0.39
200g / 7oz Plain Flour 0.10
½ tsp Baking powder 0.02
½ tsp Mixed spice 0.06
1 tsp Cinnamon 0.04

Put the mixed fruit, cherries, lemon and orange zest and juice and 50 ml of the brand into a pan. Bring to a simmer on the hob and simmer for 5 mins or until the fruit is soft.
Add the butter and sugar into a bowl and cream together with a whisk. Add one of the eggs and whisk it in and then the other two in stages, wicking each one in as it is added. Keep whisking the mixture until it is light and creamy.
Let the fruit mix cool and then fold it onto the sugar, butter and egg mix. Combine the flour, baking powder, cinnamon and mixed spice.
Then fold it into the wet mix.
Prepare the baking tin with greaseproof paper on the bottom and then a double lining of greaseproof paper up the sides and extending over the rim of the tin.
Spoon the fruit cake mix into the tin.
Bake in the oven at 150c / 304f / Gas mark 2 for 1h45min.
(Check the cake after 50 mins and place some tin foil over the top of it to prevent the top from burning.
When the cake is baked and a skewer comes out clean, set it aside to cool.
When cool make a number of holes in it with the skewer and pour a little of the brandy into the holes. Wrap the cake in greaseproof paper and tin foil and place it in an airtight container and leave it for 4 weeks. Each week repeat the brandy and wrap the cake back up.
