Warm Caramel Apple Cake with Caramel Sauce
1 1/2 cups self-rising flour
2/3 cups white sugar
3/4 cup milk
2 Tablespoons oil
1 teaspoon vanilla
2 cups apples, peeled and diced
1 1/2 cups packed brown sugar
1 teaspoon ground cinnamon
2 cups boiling water
vanilla ice cream
Preheat oven to 350°.
Mix the self-rising flour and white sugar in a medium bowl. Whisk in the milk, oil, and vanilla. Pour into a greased 9-inch square baking dish. Top the batter with the diced apples, very slightly pressing them down into the batter.
Mix together the brown sugar and cinnamon. Spread over the apples. - DO NOT STIR! Gently pour the boiling water over the brown sugar mixture - DO NOT STIR! Bake for 50 to 60 minutes or until just firm and lightly browned. Serve warm with vanilla ice cream.
There will be a layer of caramel sauce at the bottom of the dish that you can spoon over the dessert and ice cream.
