Perogies, pierogi or vareniki, is a traditional comfort food in my home. These perogies are filled with potatoes, farmer's cheese and fresh cream cheese. You don't have to add the cream cheese but if you do make sure it's not the stuff that comes in a block. Look for something that has a shorter shelf life. It will taste so much better and be more authentic.
My grandmother made the best pierogi in her village. Everyone loved them because her dough was rolled out thin which made them so tender. The ingredients were grown on her land, with her hands making everything fresh and delicious. Everything was made from scratch those days. This recipe makes 80 -100 perogies depending how thin you roll out your dough. You can always freeze them and have dinner ready for those busy days.
If you get left over dough, roll it out and pan fry it with a little oil. Makes a yummy flat bread.
Dough
5 cups all purpose flour
1 1/2 cups water
2 large eggs
2 tablespoons oil
1 teaspoon salt
Potato & Cheese Filling
12 medium sized potatoes (yellow fleshed/ Yukon Gold)
2 cups farmer's Cheese (recipe linked)
1/2 cup cream cheese
1- 2 teaspoons salt (to add to the boiling water for the potatoes)
Bacon Topping (optional)
1 package of bacon 375 grams (diced)
2 onions (diced)
1 tablespoon olive oil
Garnish
Sour cream and chives (optional)
If you do not want to use bacon then just add butter or oil to you bowl. This will prevent the
pierogi from sticking to each other.
To Freeze Pierogi
After you have placed all your pierogi on a floured baking sheet, in a single layer, cover with plastic wrap and place in them in the freezer. Make sure they are not touching each other. Once frozen, transfer to a large freezer bag.
