This video shows how to prepare a dry chutney powder using dried bitter gourd. Bitter gourd is known as karela in Hindi and Kakarakaya in Telugu. This spicy chutney powder can be used with rice and ghee or with dosa or idli.
Ingredients for 16 oz of Spicy Karela Chutney Powder:
2 cups dried karela pieces
1/4 cup oil
2 Tbsp Amchoor powder (or tamarind powder)
1 Tbsp salt (slightly more or less as per taste)
2 Tbsp chili powder (mild or hot chili powder as per taste)
6 large garlic cloves
1 Tbsp cumin seeds
Optional - 1/4 tsp asafoetida
Optional - 1 tsp roasted fenugreek powder
Optional - few dried curry leaves
