Ingredients:
* 1 rack of lamb (8 bones) approximately 1.5 lbs
* ½ teaspoon sea salt
* ¼ teaspoon ground black pepper
Sauce
* 2 tablespoons dijon
* 2 tablespoons light brown sugar
* 2 cloves garlic minced
* 2 tablespoons extra virgin olive oil
* 3 tablespoons fresh rosemary & thyme chopped
* ½ teaspoon sea salt
* ½ teaspoon ground black pepper
Recipe Notes:
Allow the lamb to sit at room temperature for 30 minutes before cooking.
Roast the lamb for 15-25 minutes at 425 degrees F until the internal temperature reaches 125 degrees F.
