This is a great crowd pleaser recipe, whether it is the weekend or a special occasion, which is why I have chosen it for my Diwali main meal. It is a easy and simple recipe and tastes amazing!
Ingredients
6-8 tbsp sunflower oil
5 medium sized onions, thinly sliced
For the vegetables
2 bay leaves
1 stick cinnamon
2 star anise
5 cloves
5 cardamom pods
1 tsp cumin seeds
2 medium sized onions, finely chopped
2 cloves garlic, grated
1 cm ginger, grated
2 tomatoes, finely chopped
1 tsp salt
1 tsp chilli powder
1 tsp turmeric powder
1 tsp garam masala
1 tsp ground cumin
1 tsp chaat masala
1/2 tsp sugar
1 small cauliflower, roughly 400 gms, cut into florets
200 gms fine beans, cut into half
1 carrot, roughly chopped
2 potatoes, cut into 1 inch pieces
100 ml water
For the rice
Pan full of boiling water
1 bay leaf
1 stick cinnamon
4 cardamom pods
8 black peppercorns
400 gms basmati rice
To layer
2 tbsp milk
pinch of saffron
1 tsp rose water
handful of fresh coriander leaves, finely chopped
handful of fresh mint leaves, finely chopped
