Resep Sate Ayam Khas Senayan (4-5 porsi)
Bahan marinasi:
600 gr paha ayam filet
3 siung bawang putih
5 siung bawang merah
1 sdt ketumbar
6 cm lengkuas, iris
5 sdm kecap manis
1 buah jeruk nipis
1 sdt garam
1 sdt kaldu bubuk / penyedap
¼ sdt merica
300 ml air
Bahan saus:
120 gr kacang goreng
3 siung bawang putih. potong
5 siung bawang merah, potong
4 buah cabai merah keriting, potong
50 gr gula merah
3 lembar daun jeruk
500 ml air
2 sdm kecap manis
¼ sdt garam
Minyak untuk menumis
Lainnya:
Margarin
Pelengkap:
Bawang merah iris
Cabai rawit merah rebus
Ketupat
Jeruk limau
Langkah:
1. Potong ayam memanjang lalu pindahkan ke dalam mangkuk
2. Blender bawang merah, bawang putih, lengkuas, ketumbar, dan air hingga halus lalu tuang ke dalam ayam
3. Masukkan kecap manis, garam, kaldu bubuk, merica, dan perasan jeruk nipis, aduk rata kemudian tutup dengan cling wrap, masukkan ke dalam kulkas semalaman
4. Untuk saus, panaskan sedikit minyak lalu tumis cabai keriting, bawang putih, dan bawang merah, sisihkan
5. Blender kacang, air dan tumisan bawang hingga halus lalu masak kembali
6. Tambahkan gula merah, daun jeruk, kecap manis, dan garam, masak di api kecil sambil diaduk hingga mengental
7. Tusukkan sate dengan tusuk sate, panaskan wajan kemudian masukkan sedikit margarin
8. Masukkan sate ke dalam wajan, masak hingga kedua sisi kecokelatan, kecilkan api lalu tutup wajan, masak sesaat
9. Sate khas senayan siap disajikan dengan cabai rawit, jeruk limau, ketupat, dan irisan bawang merah sebagai pelengkap

“Sate Khas Senayan” Chicken Satay Recipe (yield 4-5 servings)
Marinade ingredients:
600 g chicken thigh fillet
3 clove garlic
5 pc shallot
1 tsp coriander
6 cm galangal, sliced
5 tbsp sweet soy sauce
1 pc lime
1 tsp salt
1 tsp stock powder / MSG
¼ tsp pepper
300 ml water
Sauce ingredients:
120 g fried peanuts
3 clove garlic, sliced
5 pc shallot, sliced
4 pc red curly chili, sliced
50 g palm sugar
3 pc lime leaf
500 ml water
2 tbsp sweet soy sauce
¼ tsp salt
Oil for frying
Add-ons:
Sliced shallot
Boiled red Thai chili
Ketupat
Kaffir lime
Steps:
1. Slice the chicken into long strips. Set aside in a bowl.
2. Blend the shallots, garlic, galangal, and coriander with water until smooth. Add into the chicken.
3. Add sweet soy sauce, salt, stock powder, pepper, and lime juice. Stir evenly, then cover with plastic wrap and marinate in the fridge overnight.
4. For the sauce, heat some oil and sauté the curly chili, garlic, and shallots. Set aside.
5. Blend the peanuts, water, and sautéed ingredients until smooth, then cook it again.
6. Add palm sugar, lime leaf, sweet soy sauce, and salt. Cook on low heat while stirring until it thickens.
7. Skewer the meat. Heat the pan and add a bit of margarine.
8. Add the Satay into the pan. Cook until both sides are browned. Lower the heat, then cover the pan and let it cook.
9. “Sate Khas Senayan” Chicken Satay is ready to serve with Thai chili, kaffir lime, Ketupat, and sliced shallots on the side.
