Regrowing Bok Choy Plants in Water!

Chop off the base of the bok choy, much like you would slice the base of a bunch of celery. Place the bok choyin a bowl or saucer of warm water, with the cut side facing up. Set the bowl on a windowsill or another sunny location. Change the water every day or two.
Bok Choy is a dark, leafy, cruciferous vegetable, and is highly nutritious. It's packed with fiber, vitamins, minerals, and antioxidants, but is very low in calories and carbohydrates and has almost no fat. It's easy to prepare and makes a tasty addition to soups, stir-fries, and other Asian-influenced dishes.
