Using bamboo for cooking is a traditional method long before the usage of modern cooking utensils as bamboo is abundant and easy to find. Ayam pansuh or chicken cooked in bamboo is just one of the many ways bamboo stalk is used in cooking. The chicken can be replace by any type of protein; pork, fish as desire.
Bidayuh food is basically simple, organic and healthy as most of the ingredients are sourced directly from the nature; from our own garden or given by relatives/neighbours or bought from morning local market. As for the ayam pansuh dish, the recipe is almost similar in any Dayak households, with minor alterations such as adding tempoyak (fermented durian) to further enhance the flavour.
