There are 2 types of Indonesian chicken dishes, namely Ayam Penyet and Ayam Geprek, which have the same meaning: fried chicken that is mashed or crushed before serving. Served with Sambal (Indonesian chili sauce).
Some say the dish is called Ayam Geprek when the chicken is coated with batter and fried until crisp. While for Ayam Penyet, the chicken is first half-boiled with yellow spices and then deep-fried in hot oil.
But there are also those who say that Ayam Geprek and Ayam Penyet are the same. It doesn't matter whether the chicken is fried with or without batter. The important thing is that the fried chicken piece is smashed/crushed before serving.
Ingredients for Ayam Penyet:
1-2 whole mini roosters (or 1 organic free-range chicken)
2 teaspoons of coriander seeds
2 teaspoons of salt
4 garlic cloves
3 medium-sized or small banana shallots (or 8-10 small regular shallots)
2-3 cm of galangal
3-4 cm of ginger
4-6 cm of thin turmeric
5-6 candlenuts (or 6-8 macadamia nuts)
1 stalk of lemongrass
3-5 bay leaves
5-7 kaffir lime leaves
cooking oil (for deep frying)
Ingredients for Sambal Hijau:
4 garlic cloves
2 medium-sized banana shallots (or 8-10 small regular shallots)
some of green pepperoni (The amount is adjusted to your taste)
some of large green chili peppers (The amount is adjusted to your taste)
green chili peppers (optional, for the spiciness, the amount is adjusted to your taste)
5-7 tablespoons of coconut oil
1 teaspoon of salt
1 teaspoon of sugar
1-2 limes
Additional ingredients:
1 medium-sized field cucumber
fried onion
