GUNTUR NALLA KARAM PODI
Nalla Karam literally translates to ‘Black chili powder’ . Andhra cuisine have different varieties of spiced powders like Gun powder, idli karam , spicy breakfast powder, Guntur Nalla Karam , sesame seeds powder, curry leaves powder, kandi podi . Each home has its own version of podis and over the years we have been trying out various permutations and combinations trying to get that perfect karam.
Hope you would like my version I have copied the ingredients from the packet of Nalla karam podi sold in the market and used all the ingredients they have mentioned in that pack .
Ingredients
• Coriander seeds 1/2 cup
• Masoor dal/ Red Lentils dal 1 Tbsp
• Black gram dal 1/2 cup with husk
• Chana dal 1 tbsp,
• Cumin seeds 1 tsp
• Fenugreek seeds 1 Tbsp
• Sesame seeds 1 Tbsp
• Dry red chilis 25-30
• Curry leaves 10-15
• Garlic pods 4-5
• Salt 1 tsp
• Oil 2 tsps
Preparation
1. Heat 1 tsp oil in a pan add Black gram dal 1/2 cup ,Massor dal /Red lentils dal 1 Tbsp , Chana dal 1 Tbsp mix and roast them till they change color and releases the aroma .cumin seeds.
2. And Coriander seeds 1/2 cup , Fenugreek seeds 1 tbsp roast them for 3 to 4 minutes, add Sesame seeds 1 tbsp , Cumin seeds 1 tbsp and rosy for 1-2 minutes.and take them out and set aside to cool.
3. In the same vessel, add 1 tsp oil, add 25-30 Red Chillies, and 10-12 Curry leaves and rosy them till they become crisp and remove them and set aside to cool.
4. Transfer all of them to a grinder and add Salt according to your taste and grind then to a fine powder.
5. Finally add 4 raw garlic cloves and grind for 5-8 seconds and remove.
6. Store in an air tight container. Serve as and when required with rice, idli and Vada , dosa.
