No Fry Shaam Savera Kofta
I am not sure why this recipe is less popular than malai kofta, but Shaam Savera Kofta definitely is a one notch above than any other kofta curries I have ever tasted. The flavors of Palak, texture of paneer in buttery creamy tomato gravy, it’s unbelievably delicious. And I have given it no fry twist.
Shaam Savera meaning you get dark color outer coating of milky white paneer inside; and it's served in rich creamy tomato gravy; hence it's called Shaam Savera Kofta Curry recipe.
Ingredients :
4 tsp + more oil
7-8 finely chopped garlic cloves
Some finely chopped green chillies
Small bunch of finely chopped spinach (palak)
1 medium sized boiled potato
2 tbs dry roasted gram flour (besan - maida, dry besan or bread crumbs optional)
Salt as per taste
150 gm paneer
Some grated ginger + 1 small chopped ginger knob
Some crushed black/white pepper
1/2 tsp ghee
Some cumin seeds (jeera)
Some whole dry spices (dalchini - cinnamon stick, 2 bay leaves - tej patta, 2 small elaichi - cardamom, 1 tbs coriander seeds - sabut dhaniya)
1 chopped onion
7-8 pieces of cashew
1.5 tsp garam masala
Some turmeric powder
Some red chilli powder
4-5 chopped tomatoes
Method :-
To Make Kofta :
Heat up the pan, add 1 tsp oil
Add 2-3 finely chopped garlic cloves
Add some finely chopped green chillies
Add a small bunch of finely chopped spinach (palak)
Cook it on high flame, then add 1 medium sized boiled potato and mix it
Add 2 tbs dry roasted gram flour (besan - maida, dry besan or bread crumbs optional)
Transfer the stuffing in a bowl and let it cool down
Then add salt and mix it (as per taste)
Now to make paneer stuffing, take a small mixing bowl, add 150 gm paneer
Add some grated ginger
Add some crushed black/white pepper
Add salt as per taste and mix it
Further roll out few balls from palak mixture, make a small dent in the center, add stuffing and roll kofta covering the sides
Heat up the appam pan, pour some oil in each cavity.
Add koftas in all cavities and cook until they turn golden-brown
To Make Gravy :
Along with this heat up another pan, add 3 tsp oil
Add 1/2 tsp ghee
Add some cumin seeds (jeera)
Add some whole dry spices (dalchini - cinnamon stick, 2 bay leaves - tej patta, 2 small elaichi - cardamom, 1 tbs coriander seeds - dhaniya)
Then add 4-5 chopped garlic cloves
Add 1 small chopped ginger knob
Add 1 chopped onion
Add salt as per taste and saute until it turns softer
Add 7-8 pieces of cashew
Add 1.5 tsp garam masala
Add some turmeric powder
Add some red chilli powder
(add spices as per your taste)
Then add 4-5 chopped tomatoes
Cover the lid and cook until it turns softer
Turn off the heat and let it cool down
Then churn in mixie to make thick paste
Heat up the pan and add this gravy in it
Add some water (if it's too thick)
Bring it to a boil and turn off the heat
Take gravy in a serving plate, cut the koftas and add in it
And then your Deliciously Yummy Shaam Savera Kofta ready!!!
