With all the recent craze about Castella cakes or you may also called it as Egg Sponge cakes, I got to try one and that is Ah Mah’s Traditional Homemade Egg Sponge Cakes or in Chinese it’s called “阿嬷老字號古早味現烤雞蛋糕”. Here in Vivocity, it just opened last week I decided to give a try to see if it really it’s worth going nuts about it.
It's about 10.15am in the morning and the queue was not really that long and while waiting, I managed to see the process of baking these cakes – the pastry chef pouring out the batter, laying the cheese, putting it into the oven, flipping the cake high up in the air (to remove the baking paper and mind you, the cake looks heavy to flip it the normal way), cutting the cakes into equal sizes (they actually used a ruler to measure precisely for the cuts!
