Orecchiette with turnip greens - similar to broccoli rabe ("orecchiette con cime di rapa") is a classic dish from Puglia region in Southern Italy, where these very healthy vegetables typically grow. They belong to the broccoli family and are rich of ferrum. Fried in extra virgin olive oil together with some garlic they will spread all their nice flavors. I have added in this recipe also some anchovies to add extra taste experience – they will immediately melt in hot olive oil. For the friends of spicy dishes, I have also included a homegrown chili.
This dish is also part of my "poor man's dish" series, or "Cucina Povera" as called in Italy. This is a typical characteristic for low cost of ingredients vs. high quality of food.
Ingredients for 3 persons:
500 g of turnip greens or rapini
250 g of orecchiette pasta (or any other preferred pasta type)
5 anchovies (optional)
extra virgin olive oil
1 shot of white wine
1 clove of garlic
1 chili (optional)
salt (as much as needed)
black pepper (as much as needed)
